Ingredients:
- 60 gr boiled quinoa (white, black, red)
- 20 gr boiled barley
- 20 gr avocado cut in small dice
- 5 gr chopped spring onion
- 1 twig fresh oregano leaves
- 6 leaves chopped peppermint
- 1 gr chopped parsley
- Some extra virgin olive oil
- Lemon zest
- 40 ml lime dressing
- 4 baby green beans
- 5 gr baby arugula salad
- 30 gr avocado cut in slices
- 3-4 slices of peach, slightly sauté or baked in the oven.
Mix all the ingredients from 1 to 11 in a bowl. When you serve in a plate garnish with the arugula salad, the sliced avocado, and the peach.

Lime dressing:
- 2 limes, zest and juice
- 80 gr honey
- 60 ml apple vinegar
- 60 gr mild mustard
- 10 leaves fresh peppermint
- 10 leaves fresh basil
- 2 ice cubes
- 240 ml extra virgin olive oil
Put the ingredients from 1 to 7 into a blender and mix in high speed. Then reduce the speed and add the olive oil slowly. It can be stored in the fridge for 5-6 days.
